Tacos were invented in Mexico before the Spanish arrived. In Mexican Spanish, taco means "light meal," but also "wedge" or "plug." Experts have made guesses about the indigenous roots of taco (like the Nahuatl word tlahco, "half" or "in the middle"), but this connection hasn't been proven. Today when you order a taco, it might come on a soft fried tortilla, and be filled with meat, fish, vegetables, beans, cheese.

When you bite into a taco, quesadilla, or anything else involving a traditionally made corn tortilla, your taste buds get to experience the results of an ancient chemical process called nixtamalization. The technique dates to around 1500 BCE and involves cooking corn kernels with an alkaline substance, like lime or wood ash, which makes the dough softer, tastier, and much more nutritious.
